
This matcha brownie recipe has the texture of fudgy brownies with the distinct earthy sweetness of Japanese green tea. These white chocolate matcha brownies have a browned crust similar to a classic brownie recipe but with a vibrant green interior. The green tea flavor balances out the sweetness you would get in regular brownies.
These green tea brownies are sweet, chewy, and they smell like buttery flowers. Is that a thing? It’s one of my favorite matcha recipes.
This recipe shares the fudgy texture of brownies. Instead of cocoa powder and dark chocolate in the brownie batter, super finely ground green tea leaves and melted white chocolate impart lightly sweet, earthy flavors.
No joke, I’ve been eating this for 3 days straight, just to make sure that they’re still edible days after being made. And they are. They’re just as delicious. You don’t even need to reheat it to enjoy it.
No fancy equipment here, just a baking pan and an electric mixer if you have it.

Matcha
Japanese green tea powder has many benefits: It helps you stay alert, is high in antioxidants, improves brain function, may improve heart health, and has cancer fighting effects.*
This is my favorite brand of matcha. This is how I check for authenticity.
Special things you need
- Matcha powder. Ceremonial grade or culinary grade. Ceremonial matcha is the best matcha powder. Ceremonial is brighter and smoother than culinary grade matcha. It’s not necessary, but it gives you the bright green color. Ceremonial will have an extra cost. Both types have the same health benefits. This is the one I used.
- White chocolate. White chocolate chunks or white chocolate chips will do. The sweetness of the white chocolate mellows out the bitter matcha flavor.
- 8″x8″ square pan. You can use a sheet pan if you want a shorter brownie.
- Electric mixer if you have it, otherwise some muscle power. I used the flat paddle included in my mixer.

How make matcha brownies
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a 8″×8″ baking pan with cooking oil, then line with parchment paper. Set aside.
- In a small saucepan, heat the butter over high heat until it melts. Remove from heat.
- Add white chocolate and matcha powder to a small bowl. Pour the hot butter over the top and stir until all the chocolate melts and the matcha is dissolved. Let the mixture cool for 2 minutes.
- In a large mixing bowl, combine granulated sugar, brown sugar, eggs, vanilla extract, and salt. Using a hand mixer or stand mixer, mix until thick and creamy (5-10 minutes).
- Add the matcha chocolate mixture into the bowl. Mix until a uniform green batter appears. The color should turn a creamy green (5-10 minutes).
- Sift flour into the bowl. Using a spatula, gently fold the flour into the batter until all ingredients are mixed. Optional to fold in white chocolate chips or black chocolate chips or black sesame.
- Spoon into your prepared pan.
- Bake for 20 minutes.
- Take out the brownies and slam them on the counter to reduce some air bubbles. Sprinkle some flaky sea salt over the top and put the brownies back in the oven. Bake for another 20 minutes.
- Let cool for 20 minutes before serving. Cut using a sharp knife for a cleaner slice.
Expert tips & notes
- Use a fresh matcha powder. Here’s my guide on matcha selection. If you still have clumps, sift matcha powder using a wire mesh sieve.
- Beat sugar and eggs until the batter is thick and creamy. This creates a lift in the final product by incorporating air into the brownies. So you don’t need baking soda or baking powder in this recipe.
- Firmly slam the brownie pan flat on the counter in a smacking motion, just enough to get rid of air bubbles in the brownies and creates a more fudgy texture. Do this on top towels to prevent ruining your countertop.

Storing
Store in airtight container for 3-5 days. You can freeze it in an airtight container.
Reheating
You can eat this without reheating. If you prefer it warm, heat for 10 seconds in the microwave, or toast in the oven at 350 degrees Fahrenheit for 5 minutes to make it a little crispy.
FAQs
Are matcha brownies healthy?
No. But you can eat one piece and be okay.
Why does matcha turn brown when baked?
You may have baked them a bit too long. The brown sugar caramelizes it. Or, you may have added too much brown sugar.
