
Brown sugar syrup is a sweet, slightly viscous version of liquid sugar. It’s also known as dark brown sugar simple syrup and is a versatile sweetener that can be used for sweetening drinks, desserts, and other dishes you may like to try it on.
I usually use add it to my boba or bubble tea drinks, since it’s very easy to mix in compared to granulated sugar. You can also put this syrup on top of ice cream or your favorite pancakes in place of regular syrup too.

What you need
This recipe will make 16 tablespoons, depending on the thickness of the syrup. Meaning if you make a finished cup of syrup, you will get 16 tablespoons of syrup.
- Brown sugar, dark brown preferred. This gives it a more molasses taste, and makes the flavor more pronounced compared to regular simple sugar syrup.
- White sugar. This further sweetens the syrup.
- Water. This is to help with reduction and mixing the syrup.
How to make it
- In a small pot on high heat, mix equal parts dark brown sugar, white sugar, and water (I use 1/2 cup each), and bring to a boil.
- Reduce the heat to low and stir until it’s slightly thickened, about 5-8 minutes.
- Remove from heat, let cool, and put into a bowl.
This recipe is a great marinade for brown sugar boba. You can let the boba rest in this syrup to make the boba sweet. I like leaving it in there for at least 30 minutes.
Storage
Store in a microwavable, air-tight container in fridge for up to 2 months. The sugar may crystalize, so put under warm water or microwave to turn it back into liquid. Do not freeze. I like using a glass jar with a wide mouth to scoop out servings with a teaspoon.
Variations
Use dark brown sugar for a darker, color with a stronger molasses taste. Use light brown sugar for a softer taste.
Add 1 teaspoon vanilla extract for a light vanilla essence.
